Chicken and Zucchini Kabobs
Fire up the grill and be prepared for a great supper! I love limes and the Lime Butter Sauce for these kabobs is delicious. This is an easy supper that you can have on the table in about one hour.
Ingredients
Kabobs
- 1/2 cup vegetable oil
- 1 tbsp lime zest
- 1/4 cup fresh lime juice
- 2 tbsp distilled white vinegar
- 2 tbsp honey
- 3 cloves garlic minced
- 1 tsp red pepper flakes optional
- 2 lbs boneless, skinless chicken breasts cut into 2-inch pieces
- 4 small zucchini squash cut crosswise into 1-inch pieces
- 1 8oz package mushrooms
- hot cooked rice
Lime Butter Sauce
- 1/2 cup butter
- 1 tbsp lime zest
- 2 tbsp fresh lime juice
Instructions
- In a small bowl, whisk together oil, lime zest, lime juice, vinegar, honey, garlic, and red pepper flakes.
- In a large bowl, combine chicken, squash, onion, and mushrooms. Pour oil mixture over, tossing gently to coat. Cover and refrigerate for 30 minutes.
- Remove chicken and vegetables, discarding marinade. Thread chicken and vegetables alternately onto 12-inch water-soaked skewers.
- Grill chicken kabobs, covered with grill lid, over medium-high heat (350 to 400) for 15 to 20 minutes, or until done, turning occasionally.
- Serve with hot cooked rice and Lime Butter Sauce.
Lime Butter Sauce
- In a small bowl, combine butter, lime zest, and lime juice. Microwave on high in 30 second intervals until butter is melted. Stir to combine.
