Chicken and Gnocchi Soup
Seriously delicious! Got the recipe from a friend in Arizona.
Ingredients
- 1/2 cup butter
- 3/4 cup celery chopped
- 3/4 cup onion chopped
- 1/2 cup carrots grated finely and chopped
- 1 1/2 tsp garlic minced
- 1/3 cup flour
- 3/4 cup heavy cream
- 3/4 cup milk
- 4 cups chicken broth
- 1 1/2 cups cooked chicken
- 3/4 cup spinach julienne cut
- 16 oz gnocchi (potato dumplings)
- 1/2 tsp rosemary
- 1/4 tsp pepper
- 1/4 tsp white pepper
- 1/2 tsp salt
Instructions
- Melt butter in large heavy saucepan. Add onion, celery, carrots and garlic and saute until soft.
- Add flour mixing well and cook for 3 minutes, stirring well. Add cream, milk, and broth; mix well. Cook and stir until mixture thickens and comes to a boil.
- Reduce heat and stir in chicken, spinach, gnocchi and remaining seasonings. Adjust seasonings to taste.
- Cook over low heat for 8-10 minutes until gnocchi becomes tender.
