Puffed Apple Pancakes
This recipe was given to me by my sister in-law, Linda Duncan. She received it from her daughter’s mother in-law.
Ingredients
- 6 eggs
- 1 cup flour
- 1 1/2 cups milk
- 3 tbsp sugar
- 1/2 tsp salt
- 1 tsp vanilla
- 1/2 tsp cinnamon
- 1/2 cup butter
- 2 peeled apples thinly sliced
- 2/3 tbsp brown sugar
Instructions
- In blender mix eggs, milk, flour, sugar, vanilla, salt and cinnamon until blended.
- Melt butter in 9×13 pan in oven. Do not let butter brown. Remove pan from oven, add apples and immediately pour batter over apples. Sprinkle with brown sugar.
- Bake at 425 degrees in middle of oven for 20-25 minutes or until puffed and brown. Serve immediately.
