Stuffed Bell Peppers
I got this recipe from my friend Jeri Heal. I’m not sure where she got it, but I love these stuffed bell peppers. I think one reason these are so good is that you take a few minutes to brown the rice. It gives them a great flavor.
Ingredients
- 2 lbs hamburger
- 2 eggs
- 6-7 bell peppers cut tops off and remove seeds
- 3 tbsp butter
- 1/2 cup onions diced
- 1/2 cup rice
Tomato Sauce:
- 1 tall can tomato juice
- 1/4 cup butter
- 1/4 cup flour
- garlic salt
- onion salt
- season salt
- pepper
Instructions
- Bring a large pot of water to a boil.
- While water is boiling, melt 3 tablespoons butter in a skillet and add onion and rice.
- Cook rice just until it slightly turns golden brown.
- Place hamburger in a large bowl. Add eggs to hamburger and season with salt, pepper and season salt. Add rice and mix.
- When water boils, add cleaned bell peppers and cook for 5 minutes. Drain water from peppers and pour water out of pot.
- In the pot add the 1/4 cup butter. When melted add flour and cook for a few minutes. Add the tomato juice and whisk until smooth, season with salt, pepper, garlic salt, onion salt and season salt until it taste good.
- Take the cooked bell peppers and stuff with hamburger mixture and set them in the tomato juice.
- Cook for 30-45 minutes until hamburger and rice are done. Occasionally spoon sauce over the peppers.
- Serve peppers with tomato sauce.
