Vegetable Beef Chowder
I got this from my friend Jeri Heal. I have made it for years, I forget how good it is. It is kind of like beef stew, but faster. Great a cold winter night. It makes a big batch.
Ingredients
- 2 lbs hamburger
- 1/2 onion chopped
- 1 cup celery
- 1 cup carrots
- 3 cups potatoes peeled and diced
- 1/2 cup barley
- 1 large can diced tomatoes
- 4 1/2 cups water
- 2 beef bouillon cubes
- 1 46 oz can tomato juice
Instructions
- Brown hamburger with onion. Season with salt and pepper. Drain off grease. In a large pot add remaining ingredients and season to taste. Simmer until vegetables are tender 30 minutes to 1 hour.
Notes
I found the barley by the rice.
