Puffed Apple Pancakes
This recipe was given to me by my sister in-law, Linda Duncan. She received it from her daughter’s mother in-law.

- 6 eggs
- 1 cup flour
- 1 1/2 cups milk
- 3 tbsp sugar
- 1/2 tsp salt
- 1 tsp vanilla
- 1/2 tsp cinnamon
- 1/2 cup butter
- 2 peeled apples thinly sliced
- 2/3 tbsp brown sugar
In blender mix eggs, milk, flour, sugar, vanilla, salt and cinnamon until blended.
Melt butter in 9x13 pan in oven. Do not let butter brown. Remove pan from oven, add apples and immediately pour batter over apples. Sprinkle with brown sugar.
Bake at 425 degrees in middle of oven for 20-25 minutes or until puffed and brown. Serve immediately.
