I have a terrible addiction to cookbooks.  I would rather read a cookbook, than a real book.  I also love cooking magazines.  I bought Taste of the South’s (which I like a lot) Fall Baking magazine.  There are so many yummy looking recipes in it.  This is the first one I tried.

Butterscotch- Walnut Blondies

Prep Time 10 minutes
Cook Time 20 minutes
Total Time 30 minutes
Servings 9 bars


  • 1 cup unsalted butter melted and slightly cooled
  • 1 1/2 cups firmly backed light brown sugar
  • 2 large eggs
  • 2 teaspoon vanilla extract
  • 2 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1 teaspoon kosher salt
  • 3/4 cup butterscotch morsels
  • 3/4 cup chopped walnuts


  • Preheat oven to 350. Spray an 8-inch baking pan with nonstick baking spray. Set aside.
  • In a medium bowl, whisk together melted butter and brown sugar until smooth. Whisk in eggs and vanilla.
  • In another medium bowl, whisk together flour, baking powder, and salt. Gradually add egg mixture to flour mixture, stirring to combine. Gently stir in butterscotch and walnuts. Spread batter in prepared pan, smoothing top with a spatula.
  • Bake until golden brown and a wooden toothpick comes out clean, approximately 20 minutes ( it took a little longer) but don't over bake. Let cool completely in pan.
