Vegetable Beef Chowder

I got this from my friend Jeri Heal. I have made it for years, I forget how good it is. It is kind of like beef stew, but faster. Great a cold winter night. It makes a big batch.

Total Time 1 hour 20 minutes
Course Soup

Ingredients
  

  • 2 lbs hamburger
  • 1/2 onion chopped
  • 1 cup celery
  • 1 cup carrots
  • 3 cups potatoes peeled and diced
  • 1/2 cup barley
  • 1 large can diced tomatoes
  • 4 1/2 cups water
  • 2 beef bouillon cubes
  • 1 46 oz can tomato juice

Instructions
 

  • Brown hamburger with onion. Season with salt and pepper. Drain off grease. In a large pot add remaining ingredients and season to taste. Simmer until vegetables are tender 30 minutes to 1 hour.

Notes

I found the barley by the rice.
