Smothered Chicken

I found this on a food blog called Bacon, Butter, Cheese and Garlic. I had pinned it on Pinterest a long time ago. I decided to make it the other day and it was really good. The recipe might look a little complicated, but it isn’t. It was really good.

Ingredients
  

For the Mushrooms:

  • 8 oz package mushrooms sliced
  • 4 tbsp butter
  • 2 tbsp olive oil
  • 2 cloves garlic minced
  • salt and pepper to taste

For the Creamed Spinach:

  • 1 large bag spinach leaves
  • 4 oz cream cheese
  • 1/4 cup parmesan cheese
  • 2 cloves garlic minced
  • 3 tbsp red onion
  • 2 tbsp olive oil
  • salt and pepper to taste

For the Chicken:

  • 4-5 boneless skinless chicken breasts
  • 8-10 slices Mozzarella cheese
  • 1 tbsp garlic powder
  • 1 tbsp seasoned salt, like Lawry's
  • 1 tsp pepper

Instructions
 

  • Preheat oven to 350. Sprinkle the garlic powder, seasoned salt, and pepper on both sides of the chicken. Place on a baking sheet and bake for 16 minutes.
  • For the mushrooms, melt butter and 2 tablespoons olive oil in a skillet. Put the mushrooms in and cook until browned all over. Do not season with salt until they are browned (salt makes them not brown). Add in the garlic and season with salt and pepper. Cook about 30 seconds more, then remove from pan and set aside.
  • For the spinach: Over medium-high heat in same pan, add more olive oil if necessary. Add onions and sauté 2-3 minutes. Add in the spinach and garlic. It will shrink ridiculously. When it's cooked through, stir in the cream cheese and parmesan cheese. Continue cooking and stirring until the cream cheese is melted. Season with salt and pepper. Remove from heat.
  • When the chicken is cooked 16 minutes, flip pieces over. Divide the spinach and mushrooms over the top of each breast. Lay one or two pieces of mozzarella cheese over each of chicken and cook for another 12-14 minutes, until the cheese is browned and chicken is done.

Notes

I didn't add the garlic to the mushrooms, just because it seemed like a lot of garlic.
