Chicken and Gnocchi Soup

Seriously delicious! Got the recipe from a friend in Arizona.

Ingredients
  

  • 1/2 cup butter
  • 3/4 cup celery chopped
  • 3/4 cup onion chopped
  • 1/2 cup carrots grated finely and chopped
  • 1 1/2 tsp garlic minced
  • 1/3 cup flour
  • 3/4 cup heavy cream
  • 3/4 cup milk
  • 4 cups chicken broth
  • 1 1/2 cups cooked chicken
  • 3/4 cup spinach julienne cut
  • 16 oz gnocchi (potato dumplings)
  • 1/2 tsp rosemary
  • 1/4 tsp pepper
  • 1/4 tsp white pepper
  • 1/2 tsp salt

Instructions
 

  • Melt butter in large heavy saucepan. Add onion, celery, carrots and garlic and saute until soft.
  • Add flour mixing well and cook for 3 minutes, stirring well. Add cream, milk, and broth; mix well. Cook and stir until mixture thickens and comes to a boil.
  • Reduce heat and stir in chicken, spinach, gnocchi and remaining seasonings. Adjust seasonings to taste.
  • Cook over low heat for 8-10 minutes until gnocchi becomes tender.
