I got this recipe from my Aunt Edith Holden.  The tapioca is the thickening in the stew.  This has a little different taste from regular stew.  I think it is the celery seed and tapioca, that makes it different.

Five Hour Stew

Sometimes I buy a roast and just cut it up, because it is cheaper.
Prep Time 20 minutes
Cook Time 5 hours
Total Time 5 hours 20 minutes


  • 1 1/2 pound stew meat
  • 1/4 teaspoon celery seed
  • 1/4 cup minute tapioca
  • 1 32oz. can diced tomatoes
  • 1 can water
  • Carrots onion, celery and potatoes
  • salt and pepper
  • seasoned salt


  • Preheat oven to 250
  • In a Dutch oven place raw meat, season with salt and pepper
  • Place vegetables on top of raw meat, season with salt and pepper and seasoned salt
  • Sprinkle the tapioca on top of vegetables, then add the tomatoes and the water
  • Place a tight fitting lid on the Dutch oven and place in preheated oven
  • Bake for 5 hours
