I got this recipe from my Aunt Edith Holden.  The tapioca is the thickening in the stew.  This has a little different taste from regular stew.  I think it is the celery seed and tapioca, that makes it different.

Five Hour Stew

Sometimes I buy a roast and just cut it up, because it is cheaper.


  • 1 1/2 pound stew meat
  • 1/4 teaspoon celery seed
  • 1/4 cup minute tapioca
  • 1 (32oz.) can diced tomatoes
  • 1 can water
  • Carrots, onion, celery and potatoes
  • salt and pepper
  • seasoned salt


  1. Preheat oven to 250
  2. In a Dutch oven place raw meat, season with salt and pepper
  3. Place vegetables on top of raw meat, season with salt and pepper and seasoned salt
  4. Sprinkle the tapioca on top of vegetables, then add the tomatoes and the water
  5. Place a tight fitting lid on the Dutch oven and place in preheated oven
  6. Bake for 5 hours
