Fire up the grill and be prepared for a great supper.  I love limes and the Lime Butter Sauce for these kabobs is delicious. This is an easy supper that you can have on the table in about one hour

Chicken and Zucchini Kabobs

Cook Time 15 minutes
Total Time 1 hour 5 minutes


  • 1/2 cup vegetable oil
  • 1 tablespoon lime zest
  • 1/4 cup fresh lime juice
  • 2 tablespoons distilled white vinegar
  • 2 tablespoons honey
  • 3 cloves garlic minced
  • 1 teaspoon red pepper flakes opt
  • 2 pounds boneless skinless chicken breasts, cut into 2-inch pieces
  • 4 small zucchini squash cut crosswise into 1-inch pieces
  • 1 8-ounce package mushrooms
  • Hot cooked rice
  • Lime Butter Sauce
  • 1/2 cup butter
  • 1 tablespoons lime zest
  • 2 tablespoons fresh lime juice


  • In a small bowl, whisk together oil, lime zest, lime juice, vinegar, honey, garlic, and red pepper flakes.
  • In a large bowl, combine chicken, squash, onion, and mushrooms. Pour oil mixture over, tossing gently to coat. Cover and refrigerate for 30 minutes.
  • Remove chicken and vegetables, discarding marinade. Thread chicken and vegetables alternately onto 12-inch water-soaked skewers.
  • Grill chicken kabobs, covered with grill lid, over medium-high heat(350 to 400) for 15 to 20 minutes, or until done, turning occasionally.
  • Serve with hot cooked rice and Lime Butter Sauce

  • In a small bowl, combine butter, lime zest, and lime juice. Microwave on high in 30 second intervals until butter is melted. Stir to combine.
