Chicken and Gnocchi Soup

Ingredients

  • 1/2 cup Butter
  • 3/4 cup Celery, chopped
  • 3/4 cup Onion, chopped
  • 1/2 cup Carrot, grated very fine and chopped
  • 1 1/2 teaspoon garlic, minced
  • 1/3 cup flour
  • 3/4 cup heavy cream
  • 3/4 cup milk
  • 4 cups chicken broth
  • 1 1/2 cups cooked chicken
  • 3/4 cup spinach, julienne cut
  • 16 ounces gnocchi (potato dumplings)
  • 1/2 teaspoon rosemary
  • 1/4 teaspoon pepper
  • 1/4 teaspoon white pepper
  • 1/2 teaspoon salt

Instructions

  • Melt butter in large heavy saucepan. Add onion, celery, carrots and garlic and saute' until soft. Add flour mixing well and cook for 3 minutes, stirring well. Add cream, milk, and broth, mixing well. Cook and stir until mixture thickens and comes to a boil. Reduce heat and stir in chicken, spinach, gnocchi and remaining seasonings. Adjust seasonings to taste. cook over low heat for 8 – 10 minutes until gnocchi becomes tender
