Seriously delicious!

Chicken and Gnocchi Soup
Servings 6
Ingredients
- 1/2 cup Butter
- 3/4 cup Celery, chopped
- 3/4 cup Onion, chopped
- 1/2 cup Carrot, grated very fine and chopped
- 1 1/2 teaspoon garlic, minced
- 1/3 cup flour
- 3/4 cup heavy cream
- 3/4 cup milk
- 4 cups chicken broth
- 1 1/2 cups cooked chicken
- 3/4 cup spinach, julienne cut
- 16 ounces gnocchi (potato dumplings)
- 1/2 teaspoon rosemary
- 1/4 teaspoon pepper
- 1/4 teaspoon white pepper
- 1/2 teaspoon salt
Instructions
- Melt butter in large heavy saucepan. Add onion, celery, carrots and garlic and saute' until soft. Add flour mixing well and cook for 3 minutes, stirring well. Add cream, milk, and broth, mixing well. Cook and stir until mixture thickens and comes to a boil. Reduce heat and stir in chicken, spinach, gnocchi and remaining seasonings. Adjust seasonings to taste. cook over low heat for 8 – 10 minutes until gnocchi becomes tender
