I got this recipe from Tiffany’s friend Piper Sweat’s mother, Melinda.  This is a dump cake, takes about 5 minutes to put together and is delicious warm.

Pineapple cake

Pineapple Cake

Prep Time 10 minutes
Cook Time 35 minutes
Total Time 45 minutes

Ingredients

  • 1 16 oz. can crushed pineapple drain a little bit of the juice off
  • 2 cups sugar
  • 2 cups flour
  • 1 teaspoon vanilla
  • 2 eggs
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • Icing:
  • 1 cup coconut
  • 2/3 cup milk
  • 1 cup chopped nuts
  • 1 cube butter
  • 1 cup sugar

Instructions

  • In a large mixing bowl, combine all cake ingredients, mix until combined ( I just use a spoon)
  • Pour into a lightly greased 9x13 baking pan
  • Cook at 350 for 35 minutes
  • While cake is cooking make Icing
  • In a sauce pan combine all icing ingredients and bring to a boil.
  • Remove from heat and pour over warm cake
