This recipe came from my sweet mother-in-law, Velda Stowell.  She has made this cake for as long as I have known her.  It was not Thanksgiving unless she made this cake. It is one of Kyle’s favorites and he makes it a couple of times a year himself.  You can’t make this cake and not think of Grandma Stowell.

Chocolate Chip Cake

Prep Time 15 minutes
Cook Time 40 minutes
Total Time 55 minutes

Ingredients

  • 1 cup chopped dates
  • 1 1/4 cup hot water
  • 1 1/2 cup sugar
  • 2/3 cup Crisco shortening
  • 2 eggs
  • 2 cups flour
  • 1 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1 teaspoon baking cocoa
  • 1 1/4 cup chocolate chips
  • 1 cup chopped nuts
  • 1/4 cup sugar

Instructions

  • Add the chopped dates to the hot water and set aside.
  • Cream the sugar and shortening, add the eggs one at a time mixing after each addition.
  • Add the flour, soda, salt and cocoa mix until well blended.
  • Add the date mixture and 3/4 cup chocolate chips and 1/2 cup chopped nuts.
  • Mix
  • Pour mixture into a greased 9 x 13 baking pan
  • Sprinkle remaining chocolate chips and chopped nuts on top of batter and sprinkle 1/4 cup sugar on top of the nuts.
  • Bake at 350 for 40 minutes.
